Food Service Regulations
Registered Dietitians work closely with facility CDMs (Certified Dietary Managers) to assure the kitchen and staff are working within state food service regulations. This can include routine training, monthly inspections, and corrective action. It is imperative for the RD and CDM to have a good working relationship to have the kitchen operating within survey compliance at all times.
Appropriate Charting
The Registered Dietitian is responsible for charting on all new admissions, screening residents for malnutrition, and maintaining timely follow up charting on all residents with active wounds and significant weight loss, as well as thoroughly documenting all applied interventions and their outcomes. Unavoidable weight loss and gains must also be identified to be within survey compliance.
Comprehensive Care Plans
The Registered Dietitian, MDS coordinator, and the entire interdisciplinary team all work together to make sure care plans are well written and include all necessary information to deliver the best possible care to the resident. The RD’s care plan should include diet type, behavior at meals, weight concerns, present wounds, and any pertinent labs relevant to nutrition status.
